Quick and Cool Meals - Don’t Slave Over a Hot Stove When the Weather is Hot

When it gets warm outside, no one wants to stay in the kitchen. Also, the heat diminishes the appetite for heavy foods. Give that stove a rest and turn to lighter meals that are quick and easy.

During the spring and summer, farmer’s markets and grocery stores are teeming with fresh fruits and vegetables. Fruits and veggies are simple yet healthy foods. Most need little preparation to make them yummy.

Use these items to fashion meals for your family. Very little prep time is involved and everyone gets a cool treat. Use spices to add zest to the meal instead of heavy sauces and marinades.

Salads are big when the weather is warm. Lettuce comes in a variety of shapes and tastes. It can be used as a base or as a part of the salad.

If lettuce is an integral part of your salad, don’t drown the taste with too much salad dressing. Purchase or make your own oil and vinegar dressing for salads. Oil and vinegar gives a light taste and you can add spices to the dressing for different flavors.

Lettuce can also be a platform from which to build another type of salad. Macaroni, chicken, turkey, shrimp, and potato salads are popular meal ideas when it gets hot. The salads include meat, vegetables, and starch for a complete meal.

Most meats can be purchased already cooked. For potato salad, you can buy it from the store or boil the potatoes yourself. If you choose to boil them, make sure that you boil enough for several salads.

Macaroni salad is a lunch (with fruit) or dinner (alone) choice that is filling. Begin by boiling the macaroni, depending on the size of your family, six to eight cups of macaroni should be enough for a large salad. While the macaroni cooks, chop up boiled eggs and drain two cans of chunk tuna in water. Boiled eggs are another food that can be prepared in advance and stored in the refrigerator until you need them.

If you like onions, mince a half to a whole medium onion. Set all of these things aside. When the macaroni is cooled, add the chopped eggs, onions, tuna, and relish to the macaroni. Finally, add a cup of mayonnaise (can use light or fat free) and half a cup of mustard to the bowl. Mix thoroughly and chill.

Good meals don’t have to be made in a hot kitchen using the oven. Ingredients for quick meals are as close as your grocery store and take little time to prepare. Your family will be happy, healthy, and asking for more.

Ultimate Garlic Bread

1 loaf of French bread

Olive oil

Garlic cloves peeled and cut in half

Shredded cheese of your choice

Cut the French bread in half, drizzle with olive oil and toast under a broiler.

While it is still hot, take the garlic half and rub it over all of the bread. Sprinkle with cheese and place under the broiler again until cheese is melted and toasty brown.

Mother’s Chicken Salad

2 large boneless chicken breasts
Hellman’s Mayo*
4 large stalks of celery
Salt
Pepper

Roast the chicken breast in a 425-degree oven until fully cooked. Let cool. (You can also boil the chicken breast for twenty minutes)

Each stalk of celery should be sliced into thin slices and chopped finely.

Dice the chicken breast into small dices and combine with the celery. Add 1 cup of mayo and mix well being careful not to break up the chicken pieces.Sprinkle with salt and pepper to taste.

Sprinkle celery salt on top of the salad and put on either rolls or crackers.

*It is very important to use Hellman’s mayo. No other can compliment this chicken salad.

BBQ Sauce Surpreme

2 cup tomato ketchup
1/2 cup cider vinegar
1 TBSP sugar
1/4 tsp salt
1 cup water
2 stalks celery minced
2 bay leaves
2 clove garlic
2 small onion, minced
dash black pepper

Combine all the ingredients and bring to a boil. Simmer about 15 minutes. Remove from heat and strain.

Barbecue Sauce Dijon

1/4 cup olive oil
1/2 cup white vinegar
1 TBSP Sugar
2 TBSP Tomato paste
1 TBSP Dijon Mustard
4 Dashes of Hot pepper sauce
1 tsp kosher salt

Combine ingredients and refrigerate until ready to use.

Apple Cake

Batter
3 eggs
1 tsp. baking soda
2 cups white sugar
1/2 tsp. salt
1 cup vegetable oil
1 tsp. vanilla extract
2 cups all-purpose flour
1 cup chopped walnuts
2 tsp. ground cinnamon
4 cups thinly sliced apples.

Icing
2 – 4 oz. packs softened cream cheese
2 cups confectioner’s sugar
1/4 cup melted butter
1 tsp. lemon juice

Preheat the oven to 350F. Butter the bottom and sides of a 9×13 inch pan, then spread the sliced apples over the bottom, sprinkle lemon juice over the apples to help keep them from turning brown. In a small bowl, beat the eggs with a mixer until they are thick and light. Stir together the sugar and oil, then add that to the egg mixture. In a separate bowl, sift together the flour, cinnamon, and salt. Combine that with the eggs and mix well. Stir in the nuts and vanilla. This mixture will be thick.

Spread the batter over the apples and then bake the cake for one hour. You can also test for doneness by inserting a toothpick into the center of the cake. If it’s clean when you take it out, the cake is finished. Remove the cake and allow it to cool completely on a rack.

For the icing: Beat the cream cheese until fluffy and then add the melted butter. Slowly add the confectioner’s sugar and lemon juice. Frost the cooled cake and then refrigerate it.

Stuffed Chicken Breast

4 large chicken breast pounded to about ¼ inch thick

Sliced ham

Sliced provolone cheese

2 cup of flour
1 tsp salt
1 tsp pepper
1 tsp garlic powder
Panco breadcrumbs
1-cup buttermilk
6 jumbo eggs

Heat oil to 375 degrees

Combine flour salt pepper and garlic powder in a large pan
Whisk eggs and buttermilk in a small bowl.

Place one piece of cheese and one piece of ham on a chicken breast and roll it like you would an egg roll.

Dredge in flour, then in egg, and into the flour and back into the egg and then into the breadcrumbs.repeating this procedure creates an excellent crust. Place in the hot oil carefully and fry until golden brown.

Biscuits

2 cups bread flour
3 tsp double acting baking powder
1 tsp salt
1/2 cup shortening
1 cup of milk

Combine all ingredients until a soft ball forms. Drop by tablespoons onto a baking sheet and bake at 450 for 12 mins or until golden brown.

Individual potpies

Take one can of beef stew (Dinty Moore is the best) and place it in either coffee mugs or earthenware bowls use the biscuit mix above to form the crust. Bake at 450 for 8-12 mins until golden brown.

Delicious Chicken Wings

12-18 chicken wings
1/3 cup soy sauce
1 teaspooon ginger
2 garlic cloves, minced
2 green onions, minced
1 tablespoons honey
2 teaspoons vegetable oil

Combine all the ingredients to slow cooker. Cook on a low setting for about 6 to 8 hours.

Serves approx. 2 to 4 people
